August 17th:
early afternoon: a lot of anxiety and nervous going to my appointments and driving to pick up prescriptions

afternoon – evening: very mellow. Almost a sense of normal. VERY exhausted No motivation and overwhelmed with chores.

evening: went to bed at 8pm. Took seroquel early because I was still very tired and groggy from the previous nights’ dosage.

August 18th:
Morning: woke up very groggy and extremely tired. Went for blood work and fill prescriptions. Although groggy and tired, I was highly motivated. Cleaned the entire kitchen – very overwhelmed with “how the house looked.”

early afternoon: set up a play date for Nickolas *shocked myself* in the ability to set up something social for once.

afternoon: Took two hour nap after feeling incredibly tired & groggy still.

Early Evening: “Feeling very normal. No depression. No mania. No social anxiety.”

Shortly after Mike came home I felt incredibly hostile and anger. Nothing provocked this. A huge fight with Mike, a lot of crying, racing thoughts, and saying hurtful things without remorse.

Evening: a lot more calm… took ONE seroquel to tame down the grogginess & exhaustion – stayed up until midnight.

August 19th:
Early morning – EXTREME RAGE. Uncontrollable bouts of rage which causes uncontrollable crying.

10:45am – Calmed down some now. Decided to calm more with a nap when the baby goes down to rest.

Afternoon – Racing thoughts, irritable, extremely wired (wide awake feeling) cleaning nonstop, feel like needing to argue with everyone’s opinions.

Evening – Still very irritable, I’m being accused of “being difficult to deal with because I take everything said to me the wrong way.” Starting fights/arguements – pushing friends & family away due to fear of disappointing them worse because I’m so difficult to deal with.

Late Evening (8pm) – feeling sad, worthless, confused, hopeless. Very overwhelmed with feelings regarding my lack of family support. Why? I’m not sure…

08-20-10 (Previous night I took 1 1/3 seroquel)

Woke up incredibly tired after 7-8 hours of sleep. Fell asleep on the couch for another hour. Mood… mellow.

Morning – Cleaned Nick’s entire room – really took a LOT of patience but was able to do it WITH him without telling him “I’ll just do it.” A few anger attacks with yelling but we all pulled through.

Afternoon – Took a nap. Woke up feeling a lot better and refreshed.

Early Evening (3pm) Calm. Quiet. Still racing thoughts from last night’s events with my sister… trying to stay calm about it.

Evening – mellow. Went out to the store with everyone. Came home and watched a movie with everyone.

Was a late night with 1 1/2 seroquel. Went to bed around midnight.

08-21-10
Was able to sleep in thanks to Mike letting me. I still feel tired – figured out that my body isn’t used to all this sleep so I’m getting too much

Afternoon-Evening: Fairly laid back. Become extremely frustrated with Nickolas inability to comprehend simple tasks which cause rage episodes. Still very upset and overwhelmed with paranoid thoughts of families lack of care and love.

Evening – Racing thoughts, very stir crazy… gotta get up and move around, clean, can’t sit still.

08-22-10
Overslept – about 9 hours total sleep. Feeling very lazy and unmotivated today. No desire to do anything.

late morning: very little patience, still no motivation to do much.

Afternoon – Stir crazy and unable to sit. Very aggravated with housework and obsessive over chores. Went and did some running around and shopping for stuff I didn’t really need

08/23/10
Wasn’t home the entire day…
Woke up groggy again.

Went to see Dr. Phansalker. Got a new prescription and an increase of lithium. Instead of seroquel I’m now taking risperdal and ambien.

Racing thoughts today, little patience, a lot of irritation

Late evening – Very irrititable. No patience.

08/24/10
VERY Manic today. Woke up after not being able to sleep feeling fabulous. Cleaned the entire house. A lot of motivation and focus.

Afternoon – Tried to lay down for a nap knowing I need one after such little sleep and racing thoughts kept me awake. Leaving me VERY irritiable and raging.

Evening – A little more calmer. Went and took a break by shopping now ready to go to bed at 6:30pm

Will take all my meds tonight, including Ambien and hope for a better day tomorrow.

08/25/10
Morning – Had an awful night of sleep unsure of it was the Ambien or stomach flu I have.

Not much to report … the entire day I was sleeping due to the stomach flu.

Mood was fairly stabilized through it all though – no rage attacks, no loss of patience Racing thoughts made it hard to nap though. Hoping tomorrow’s attorney appointment puts an end to that.

08/26/10
Still very sick… probably not a lot to report on today.

08/27/10
Still feeling ill but a bit better than before. Unmedicated since 25th. Got in to a lot of arguments today – apparently “very difficult to deal with” and I take things out of porportion and always in anger. Nothing I was able to do was right. Everything I said set people off to say hurtful things… long crying spouts today. Wouldn’t say depression…

Racing thoughts during the evening. Unable to focus or sleep. Too much thought on

08/28/10
Woke up with an upset stomach *still*

Starting taking lithium again

Hung out with a friend (out of the normal for me) nearly the entire day

Went out that night with Mike… forgot my evening dosage of medication.

Fairly stable most of the day surprisingly

08/29/10
Kinda unstable and moody today.

Slept a lot today

Evening – Very irrational and prone to argue. Just had a bout of anger and sadness from recent events from family out of no where. Nothing triggered it but thoughts. Depression feelings4

08/30/10

Have a sense of depression today. Have a lot going on in my life (as usual) that would almost always trigger depression.

Can’t figure out sleep schedule… almost any sleep is too much sleep; little sleep leaves me groggy and tired. No/little sleep causes me to have rage fits all day.

Alright, so I haven’t blogged in way too long; well, twelve days to be exact. My apologies. I’m going to at least try to explain myself. I have been busy to say the least. The week after the Christmas party was pretty hectic. I had a lot of stuff happen. None in which I can go in to complete detail simply because I’m trying to keep this entry under 30,000 words. Heh. All in all, it was a very long week. Nickolas was having some problems at school. Our rent jumped up so we had to start to look for a new apartment because we aren’t going to stay here where it’s now not worth it at all. I had to pack and prep for our weekend getaway. Goodness, two weeks ago was a very busy week to say the least.

Now to what you all have been waiting for, our weekend getaway. It was a great weekend. I really can’t describe everything and anything that happened simply because … well … Yea, I’m not going there. Haha! Anyways, we stayed at Chula Vista Resort in Wisconsin Dells.

It was a fairly nice place. I mean, for the price, I was expecting a five-star resort, but it was … well not that. I don’t know, I really can’t complain. It’s a fairly nice place, but if I would have paid a large amount of money for that – I’d be pretty pissed off. We had won a gift card from Mike’s company Christmas Party last year and just now were able to take the vacation away to use it. It still ended up costing us out of pocket to go to this place. It ended up being like $450 for the weekend for just the room (which included access to the waterpark – which we didn’t even go to.)

On Friday afternoon, Mike got off work early and we went to take the kids over to his Mom’s house because she was going to watch the boys for us over the weekend. We dropped them off and had a couple of places we had to run around to, including the adult “video” store. After some long browsing and buying there, we finally headed on our way to the Dells.

It took us a lot longer to get up that than we had originally anticipated but that was alright. We went to Walmart to get some munchies and such for while we were in our room. We ended up just getting dinner there too. We got to the hotel and went to go check in. We noticed there were tons of people around, and all of them were apart of a group. We noticed a sign on the front desk, “MASS SATURDAY AT 6:30PM IN THE CONVENTION CENTER”. We didn’t really think much of it. Mike realized shortly after that, there was a church convention going on that weekend. HA!

We were there to have a romantic, affectionate, and well, quite frankly, kinky type of weekend together. Here we were, surrounded by thousands of bible huggers preaching to one another about their morals. Oh goodness, help me. I told Mike, “If I see a large group of them, I plan to slap your ass or throw you up against the wall and make out with you in a serious way.” I was going to at least have a little fun while I was there. We made our way up to our room which was on the 3rd floor, all the way at the end of the hall. The last room on that floor. We walked in and I wasn’t too impressed, but it would definitely serve its purpose as “our home” for the weekend.

It wasn’t a bad room. We had a king size bed, coffee maker, microwave, mini fridge, two sinks (one in the bathroom, another outside of the bathroom so someone else could get ready) and a jacuzzi tub. Yes, there is a jacuzzi tub behind the loveseat. It’s surrounded by mirrors. It was pretty big though. We were content with the room.

On Saturday after we had awoken, we laid in bed and just watched some tv together. My god, how peaceful was that. No kids screaming for you to get up. No one telling you they wet their bed, or jumping on the bed. No demands for breakfast. We rolled over, and it was silence. I honestly believe we both really needed that. It was so damn relaxing. I forgot what it was like to wake up without having a single worry in the world. Sure, we go out all the time without the kids since they’re at the grandparents overnight, but we almost always have to pick them up by 9-11am so as soon as we wake up, we are rushing out the door.

After a while, we got up and decided to browse around the hotel for a while. We threw on our lounge clothes and started to see what kind of stuff we could get in to. We wanted to go to the Bistro and get some coffee and pastries for breakfast but they didn’t have anything out for us to see what was available. Then, while we were walking around there were tons of these teenagers, that were all wearing name tags and descriptions of what churches they were apart of. We walked by the “Resurrection” room towards the gift shops. There wasn’t a whole lot at the shops, so we continued to check out the arcade and then the indoor waterpark. We didn’t even look in the waterpark. If it was any indication of anything else we say, we knew we weren’t going to be impressed. We headed back to our room to carry on with the rest of the day, while we were in the elevator we found a few bibles lined up on the advertising frame. Don’t get me wrong, I don’t mind religious people, but jeez don’t push your religious bible hugging bull shit on me. Thanks.

*Remind you, I’m leaving out some obvious parts ;]* We headed back to our room got some stuff and headed over to the Outlet Malls. We found some new shoes for Mikhail – he has to wear special, expensive shoes because he has Mike’s incredibly wide feet. We also found him some sleepers. I searched and searched for something for Nickolas, but wasn’t able to find anything he doesn’t already have. After we shopped, we headed to lunch. We went to Buffalo Phil’s and got some food. It was so good. I got the chicken fajitas. Yum! We ate far too much and headed back to our room because there really isn’t a whole lot to do in the Dells in the winter time. Obviously all the waterparks, attractions, and such are all closed.

After some relaxing and such, I decided to spend about an hour in the jacuzzi tub. I laid down, turned on the jets, added some bubbles and just laid there for an hour. I was so incredible relaxed. My mind couldn’t even think of a single thing to worry about or dwell on. I got out and just felt, so relieved. I went and took some pictures of our view from outside of our room.

It was an awesome view. You could see the Wisconsin River in the background and there was a small creek that came off the river. I liked it. I must say though, at night when I went out to smoke a cigarette, I was scared that some vampire was going to jump off the top of the trees. LOL

After going back and forth about what we were going to do next, we ended up going to Ho Chunk Casino. We ate at the buffet and went downstairs to do some gambling. Because we signed up for their rewards program we each got free $10 to play on the slots. Mike and I sat down at a $0.05 slot and started to play. As soon as we hit something, even if it was tiny, we got up and moved to another machine. We bounced from one machine to the next playing penny, two-cent, and nickle slots for a few hours. Eventually, I hit $50 on a penny slot. We could have stopped there, but we were out and having fun so we kept playing. I got down to $25 and sat down at a different slot. I got myself back up to $35 but kept playing since Mike was on his machine still. I hit $22 again and was like, “okay it’s time to go.” Needless to say, it was money we were playing that wasn’t even our anyways, and we came out ahead or you can say our dinner at the buffet was free. We headed on “home” and after some relaxing we went to bed.

The next morning we had to get up early and check out. We got up and relaxed a while before leaving. We left and headed to IHOP for some breakfast then back to Walmart so we could buy his parents their new tv we planned on getting them. We had a fairly quick ride home and went to his parents house to watch the Superbowl with them and the kids.

It was an amazing weekend. Mike and I really got the chance to re-connect. Trips like that away have always made us “reconnect and fall in love all over again”. I think we definitely needed it. I mean, granted as soon as we were home and the normal stresses of life were back on our shoulders things kinda went back to normal – either way, we still have in our memories that we were able to spend such an amazing weekend together. I love him. He really made it magical for me. He expressed how much he cared and loved me. I wish we didn’t have to leave to come back to reality. I’d miss the kids – eventually but that weekend to me was short lived. I still enjoyed myself regardless.

An article I wrote on 01/24/08, basically wrote it to some of my friends on a message board to open some eyes. Just wanted to know what others thought…

Hello everyone. (BTW, after writing this, if its in the wrong spot, I’m sorry, I couldn’t figure out the best topic forum to put it in) I just was thinking of some stuff, and decided to write a post regarding it. Simply interested in what others in this community think of the topic.

Let me begin with saying…
For those who don’t know me, quick background list. I’m 21 years old. I work full time. Work a call center that gets really slow in the wintertime, leaving a lot of time for co-workers to become friends, and talk.

Alright, with that being said. Here’s whats going on… I have a blog. I use it for my personal life rants and raves, and I also use it to post my graphics/designs/pixels that I have made. Its my sanctuary. Recently, I’ve added my blog to be password protected. Why would I put my blog on password protect, you might ask? Well, a few weeks ago, I received a comment saying, “Your picture thing doesn’t work for me.” Innocent, right? The thing that struck me as odd, is under the name of the person posted, they simply put, Me. No email address, or URL posted who this person actually is. I asked around to some of my friends, and never received an answer saying, “Yea, that was me.” So, it got me thinking… The website, interweb, is a very VERY public place. I had informed one of my good friends, who also happens to be a co-worker of my site. But, now if something happens between our friendship, do I have to worry about it being spread around work? Probably not, because he’s a good/trusting guy.

The whole point I’m trying to make in between my ramblings is… How safe are we, with blogs? The entire world, can access it. Whoever is going through, and just hopping from link to link, can find it. After they do, depending on how much you post, they could find out anything…

Now, I try to not provide extremely personal information. IE: Full name, Address, etc. But how hard is it to really find out? By looking at previous posts, without me actually spelling out the exact information, I realized that people could find out a LOT about me. While typing, you don’t realize that you reveal so much. For example:

Example A: I explained what I do for work. Basically the quick end of things. But enough information that, if you’re smart, you could figure it out. With ONE search online, you could probably find a directory of all of the businesses with the type of work I do. Knowing that I live in the state that I do, (also with the added information that every state in the US has one), you’ll find the exact place of work. Address, phone number, etc.

Example B: Family members and friends. Simply stated. Without having to try… I reveal my entire list of family and friends. Names and sometimes not. With that information how hard is it, after some searching to find out even more. Someone could probably type in “Nikkole, daughter of… (dad’s name) and (mom’s name).” Now I haven’t tried this, so I can’t be sure that it would work, but you NEVER know. Now they have my last name, which could bring my address, phone number, etc.

With those two examples, you can now see, if someone really wanted to, they could stalk me. After watching me for a short time, they could know exactly what I’m talking about…

So, this is where I ask? How safe are we? Not at all. I attempted to have my blog on password protect. I got a lot of, well for the lack of a better word, crap. “Why would you put it on as password protect, no one is going to take the time to get the password!” or “Having your blog as password protect is going to make you lose friends/readers because they’re not going to want to ask & remember the password.”

I had my blog on password protect for a long time before coming to the conclusion that theres no safe way to keep a blog on the internet. Password protected, or not. I have found a great site which is called Stat Counter Dot Com. Basically you add your website for free, it tells you all the visitors, their IP addresses, vague location, time they visited, returning visits, times, etc. It tells you A LOT of information regarding every person that views your site. It does not include names, addresses, or other personal information regarding the user. It just provides enough information that if something happens you’ll have it. Check it out: StatCounter.com. I know theres no way of protecting yourself, family, or friends from having a blog on a very public internet. The best way to not want to worry about it is to simply not have one. I have a blog simply because I always have. It’s my place to vent, rant, and rave about my life and whats going on. Its a place for me to show off my creative side and do what I want how I want. Its not as public as say; Myspace. You need to know what you’re looking for to find me basically.

So, I end this opinionated topic with this…
The reason I write this out is simply to warn my younger viewers and readers of the dangers. I know parents and adults say this often, “Dont say personal information online!” Personal information is everything. Not just your full name, but also your life. If someone really wanted to find out who you really were, etc. They could.

Want to tell me your opinion? Leave a comment below. *Remember that this is my opinion and I’m simply stating what I believe and feel. You do NOT have to agree with what I have to say. If you disagree do not snap on me saying that I’m stupid or wrong. State your arguement, and close discussion. This is a debatable topic, not something that should be fought over the internet about.

Please be aware, there is a “1st part” to this blog entry: My 2010 Resolutions Please also check that out.

On a side note – I’m currently updating my blogroll. I’m trying to work on making sure I reply to comments and I figure if I have the list of everyone that visits me on my blogroll, I’ll remember. Please, if you want to be added to my links – let me know. Thanks!

First and foremost, Happy New Year everyone! I have two blog posts I want to write today, this one to tell you all about our awesome New Year’s party that we went to, and one for all my “resolutions” which I normally don’t do but my resolutions are different this year. You will see what I mean later.

So, the last week or so, my friend and I were trying to talk Mike in to going to this party at our buddy’s house for New Year’s Eve. He wanted to go, but it’s a 45 minute drive. He didn’t want to have to drive all that way, plus being on New Years when all the drunks, crazies, and stupids are out. I totally understand. I was disappointed though because we always go to their parties for New Years Eve.

We were going back and forth the past few days about what we were going to do. Dinner and go see a movie? Dinner and stay home and watch a movie? Dinner, movie, and sledding? Yea, no idea. There was a lot of ideas passed around, ultimately it basically came down to the last 10 minutes when we decided we were going to the party.

Well, our friends came over and we went out to dinner together. After throwing around ideas for how to continue the night, we decided to go to our friends party. Regardless of the drive, it was pretty much tradition that we have done for a few years now. I was happy, I really wanted to go.

Gwenn and I started off the night early with a shot. We went to dinner at T.G.I.Friday’s and we had a drink there too (margarita for me). It was one of those things. I mean, I never go out and get the chance to party too much. So I said “Fuck it. I never get the chance to party and have a good time. I am going to go out, drink whatever, get a little drunk. I deserve it!” That’s exactly what I did. I had a little bit of this, a little bit of that. “You want to take a shot with me!?” Surrrre. Why not? Hell, its New Years Eve!

Yea. I regret that later on that night after the car ride home. -bleh- I also regret it this morning when I woke up. I’m hung over to say the least.

Highlights of the night included, but not limited to:

I got 99% on hard while singing Wonderwall by Oasis on Rockband!

I drank butterscotch schnapps (which is REALLY hard to say when you’re drunk, btw) for the first time. Yum!

I met a lot of new people. Some were cool…

Mike and I actually kissed at midnight. He got in big trouble, last year, or possibly two years ago, because he didn’t kiss me at all at midnight. It upset me, and I made sure that he knew it.

Everyone had a good time. Which was awesome. Sometimes, most of the time, some people aren’t having a good time because bickering or bastards arise. This year, everyone had a good time, which made me happy.

I attempted to get my friend Myles kissed, flashed, and/or laid… that was fun.

So anyways, where’s the pics, right? Well, there are below… Enjoy!

I don’t normally do New Years Resolutions due to the fact they never work. You set up these ridiculous goals, that you don’t necessarily have the means, abilities, or dedication to achieve. You end up failing, then beat yourself up about the fact that you were unable to keep your resolutions that were so far out there it’s no wonder you failed them.

So this year, I came up with a plan to have tons of little resolutions. I don’t really want to call the resolutions but honestly, I have no other words I want to call them. They’re not hard things. They’re completely realistic. They’re achievable! Here is my list of resolutions for 2010:

I’m going to learn a new word everyday. - Really there’s no explanation needed. I want to learn one new word a day. I’m going to achieve this by going to the daily word at A.Word.A.Day. I was being very meticulous last night when it came to drinking, but it didn’t work out well. I think I used that properly. *shrugs*

Live in the “now”. Stop regretting the past. Stop worrying about the future. - I’m awful when it comes to this. I worry about everything that will happen 5 minutes from now and 5 years from now. Why? All it does is freak me out. I need to also stop reliving the past and try to wonder “what life would have been like if…” This is going to be one of the hardest resolutions I’ve ever had, but it’s vital that I at least try to do it.

Cut back, or eventually quit smoking. - I don’t have extremely high hopes for this one. Quite frankly, I know its going to be the hardest thing I’ve ever done in my life. I’ve tried before, and I can’t handle it. I get mean, nasty, and down right unruly. I am not a nice person while trying to quit smoking.

Think of at least 1 positive for ever negative. - I’m not going to say I’ll never think negatively, because honestly that’s not me. I’m a negative person. It’s who I am. I am going to do extremely hard to think of at least one positive for everything negative I have to say. Will it always happen? No. I’ll at least give it a whirl.

I want to eat less than 3 deserts a week. - I have this thing, that I have to have desert every night. 80% of the time, I’m not even hungry for it! Here I am, in the kitchen eating it anyways just to make me feel better about whatever. I’m not going to promise I’m going to lose weight, or eat healthier. I would just like to eat less than 3 deserts a week.

I want to be a somewhat better person. – I want to treat people a little nicer.

I want to be happy. That’s not that big of a goal to some, but its huge to me. I want to just be happier and stop worrying about the little shit. I want to be grateful and appreciative of everything I do have.

Needless to say, I have a lot of resolutions for myself for this year. But I totally want to redo myself. I want to to be happy. Ultimately my 2010 is all about BEING HAPPY. The most important thing about this year when it comes to my resolutions is this: If I fail to do something – its fine! I will not give up and say “Oh, well I failed, so no more.” I will just take it as a mistake, accident, or a bad day, and I’ll pick up where I left off and try again.

Good luck with all your resolutions this year guys! What do you think will be your hardest resolution to overcome?

I woke up yesterday with a nasty sore throat. First initial thought was, “Alright, whose the ass from Christmas to get me sick?!” I feel like crap. I just want to sleep on the couch. Unfortunately, I am a mom. When moms are sick, they don’t get too much of a break. The kids don’t suddenly get put on pause so you can take some time to rest. You have to hope for your significant other – if you have one – to help you out in the tough times of being sick. Mike does his best, but he got Left 4 Dead 2 yesterday so he’s been playing that. That’s okay though. Nickolas is gone until Wednesday at Matt’s house, so I get a bit of a break from the craziness.

As you can see, and I didn’t blog about it in my previous entry – There’s a new theme! *lights fireworks* -Kaboom- -Bang- Alright, anyways, I made a new theme. I worked hard as hell on it during the duration of just one day. I started at around 6am finished designing it by 1pm and got it all coded and live sometime that night. This is by far, not my most favorite theme, but I am still very content with it at this point. I’ve had designers block for the past few months. I starred at websites for a while just to try to get some inspirational and creative juices flowing in my head – yea, that didn’t work. So, here it is. Ta-Da!

Our friend’s Adam and Gwenn bought us some presents yesterday. She bought me a set of Pyrex mixing bowl set and Julie & Julia. Mike got Willy Wonka and the Chocolate factory on BluRay and Left 4 Dead 2. I’m oober excited about the mixing bowls. You have no idea how excited. Seriously, people usually don’t get excited about a set of mixing bowls but I’ve totally wanted some. *On a side note – I just had to add the word “oober” to my dictionary on Firefox. While it might not be a real word, hell it probably isn’t even spelled correctly, I had to do it. So anyways, I want to personally thank Adam and Gwenn for our presents. You guys are awesome friends. I will definitely have to let you all know how Julie & Julia was. I have tons of other movies I need to watch too. Hmm, may have to figure out a few new sites to watch movies online. I will have to do some browsing and try to find some. I have quite a large list of “movies I want to see, but won’t force Mike to watch with me.” I had better get on that.

What else was I going to write about? Oh! I really have to start kicking myself in the butt to get into sweepstaking again. While I haven’t missed a day of entering my daily instant win games, I am having a hard time remembering and forcing myself to do the normal daily entry sweeps. I haven’t won anything since my latest big win. I guarantee that its mainly because I haven’t been entering as much as I should be – Plus, the best time to enter is early, early in the morning or in the middle of the night. Trying to stay out of another manic episode, I just won’t allow myself to stay up all night for sweepstakes.

I suppose that it is all for now. I’ll blog again soon. I’m trying to stay in touch and blog more. We’ll see how long this lasts.

This is TO DIE FOR, devilishly easy, and should be outlawed. It’s a great recipe to make with items that you already have in your pantry and have a craving for chocolate cake. Since its a single serving you don’t have to worry about over indulging because it takes a bit of work to get it done. I LOVE this recipe.

1-2-3 Chocolate Microwave Mug Cake

What you need…

3 tablespoons unsweetened cocoa
2-3 tablespoons sugar (according to desired sweetness)
1 tablespoon flour
3 tablespoons milk
3 tablespoons vegetable oil, such as canola
3 tablespoons egg white or plain Egg Whites in a carton
¼ teaspoon vanilla
optional: 1 teaspoon chocolate chips

How to Make it

1. Take a coffee-type microwavable safe mug and blend sugar, flour, and cocoa together.

2. Add milk, oil, egg white, and vanilla.

3. Stir for 2 minutes.

4. Sprinkle chocolate chips over top (Do NOT pour from bag like I did, instead of 1tsp of chocolate chips, I had 1/2 c the first time I made this!)

5. Put in microwave for 2 minutes.

6. After two minutes, lift up an edge with a spoon to make sure it’s not runny. If it is, place back in microwave for an additional 10 second intervals. Do not over cook! The texture will be moist, sticky, and appear undercooked. As long as you don’t have a puddle of batter, you’re good!

7. Enjoy or for additional greatness add some whipped cream or nuts!

Caramel Puff Corn

This recipe is DELIGHTFUL. Mike’s Mom has made it many times and it is soooo good. It is a bit different from the normal caramel popcorn because you’re using the puff corn. Be warned though, this recipe is ridiculously simple to make, and it’s so good you might pack on the pounds due to being unable to control yourself!

Ingredients:

1 small bag of puffy popcorn
1 cup butter
1¼ cup brown sugar
2/3 cup light corn syrup
1 teaspoon baking soda

Directions:

1. Preheat the oven to 250°F.

2. Empty popcorn into a double lined paper grocery bag.

3. Combine butter, brown sugar, and corn syrup in a sauce pan over medium heat until melted.

4. Add baking soda. – Mixture will foam.

First preheat the oven to 250°F. Empty the popcorn into a double lined paper grocery bag.

Next combine the butter, brown sugar, and light corn syrup in a 2 quart sauce pan over medium heat until mixture has melted. Once mixture has melted add the baking soda. This will cause the mixture to foam, but keep stirring until the soda is combined. Remove from heat and carefully pour the mixture over the popcorn in the brown paper bag. Roll the bag shut tightly and shake the bag until all of the puffcorn is covered.

Pour the covered puffcorn mixture into a large roaster pan and place in the oven for 45 minutes, stirring at least every 12-15 minutes. (I did four rotations). Remove from oven, pour on wax paper and break apart. The caramel corn will harden as it cools – Wait until it’s completely cooled before enjoying!
